– 1 cup khoya (mawa)
– 2 tbsp grated coconut (optional)
– 1/4 cup chopped dry fruits (almonds, cashews, pistachios, raisins)
– 1/4 tsp cardamom powder
– 2 tbsp sugar (powdered)

For the Sugar Syrup:

– 1 cup sugar
– 1/2 cup water
– A few saffron strands (optional)
– 1/2 tsp cardamom powder

How to Make Homemade Chandrakala – Step-by-Step Recipe

Step 1: Prepare the Dough

  1. In a mixing bowl, add maida, a pinch of salt, and ghee.
    2. Mix until the texture becomes crumbly.
    3. Gradually add water and knead into a soft dough.
    4. Cover with a damp cloth and let it rest for 20–30 minutes.

Step 2: Make the Filling

  1. Heat a pan on low flame and sauté khoya for 2–3 minutes.
    2. Add chopped dry fruits, cardamom powder, coconut, and sugar.
    3. Mix well until everything blends evenly.
    4. Remove from heat and let it cool completely.

Step 3: Assemble the Chandrakala

  1. Divide the dough into small lemon-sized balls.
    2. Roll out two small puris (circles) for each Chandrakala.
    3. Place 1 spoon of filling in the center of one puri.
    4. Cover it with the second puri, press the edges, and twist or fold them beautifully (like gujiya).

Step 4: Deep Fry

  1. Heat ghee or oil in a kadhai on medium flame.
    2. Fry each Chandrakala until golden brown and crisp on both sides.
    3. Remove and place on tissue paper to drain excess oil.

Step 5: Soak in Sugar Syrup

  1. Prepare a one-string consistency sugar syrup.
    2. Dip each fried Chandrakala into the warm syrup for 2–3 minutes.
