For the Dough:

2 cups all-purpose flour (maida)
2 tablespoons ghee (clarified butter)
A pinch of salt
Water (as needed for kneading)

For the Filling:

1 cup khoya (dried milk) or grated coconut
½ cup sugar (adjust to taste)
2 tablespoons chopped nuts (cashews, almonds, pistachios)
½ teaspoon cardamom powder
A few strands of saffron (optional)

For Frying:
Oil or ghee (for deep frying)

Gujia Ingredients
1. Prepare the Dough:

In a mixing bowl, combine the all-purpose flour, ghee, and salt. Mix well.
Gradually add water and knead into a soft, smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

2. Prepare the Filling or Gujia filling recipes

In a pan, gently heat the khoya until it softens. If using grated coconut, toast it lightly.
Mix the khoya (or coconut) with sugar, chopped nuts, cardamom powder, and saffron. Let it cool.

3. Shape the Gujias:

Divide the dough into small balls (about the size of a golf ball).
Roll each ball into a small disc (about 4 inches in diameter).
Place a spoonful of filling in the center of each disc.
